2 C sifted all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt

1 C vegetable shortening
1 C (packed) dark brown sugar
1 C granulated sugar

2 large eggs

1 tsp. vanilla extract

2 C quick-cooking oats
1 C sweetened flaked coconut
1 C (4 oz) chopped pecans
1 C spice flavored gumdrops, cut in half with oiled knife or scissors

Oven 350º F.

Sift together the flour, baking powder, baking soda, and salt.

Beat the shortening, brown sugar, and granulated sugars in a large bowl until light in color and texture, about 3 min.

Beat in the eggs, one at a time, blending well after each addition.

Blend in vanilla.

Ad the oatmeal, coconut, pecans, and gumdrops. (Mixture becomes VERY heavy.)

Scoop rounded tablespoons of dough and roll into balls.
Place 1 inch apart on parchment-lined cookie sheets.
Flatten each ball slightly with the tines of a fork.

Place oven rack in the lower third of the oven and bake until the cookies are lightly browned, about 15 min.

Transfer to wire racks and cool completely.
