Syrup:
1 1/2 C vinegar
2 C sugar
1/2 C water
1 tsp salt
Directions:
Directions:
Boil beets until tender and skins slip easily. Cut into 1/2 inch cubes or slices.
Bring syrup to a boil. Add beets and bring to a boil. Put in pint jars and seal.
Process in hot water bath 25 minutes.
