1/2 C butter
1/3 C sugar
1/2 tsp salt
1/4 tsp vanilla
1 egg separated
1 C flour
3/4 C coconut
1/2 C raspberry jam

Directions:
Directions:
Cream butter and sugar, add salt, vanilla, egg yolk. Stir in flour, mix.
Divide dough into 3 portions. Form1 inch diameter roll, cut 3/4" pieces, form into balls.
Dip into beaten egg white, roll in cocout.
Bake 300F for 20-25 minutes on ungreased cookie sheet.
Press center of cookie prior to baking, press again immediately after removing from oven.

Fill middle with Raspberry Jam.
