Ingredients:  
1 large shallot, 1 clove garlic, 3 tbsps. Champagne vinegar, 2 tbsps. balsamic vinegar, 1 tbsp.
honey, 1 tbsp. dry mustard, 1 tbsp. lemon juice, ½ cup oil, 10 cups (1 lb.) mixed greens,
1 golden delicious or a sweet apple, shaved and thinly sliced, ½ small red onion, thinly sliced,
1 cup toasted pecan or walnut halves, 1 cup shaved or shredded Gouda or Provolone

Directions:

1. In a blender, combine the shallot, garlic, vinegars, honey, mustard and lemon juice. Pulse until
blended. with blender running, slowly drizzle in the oil to emulsify and form the dressing. This will make
over a cup dressing.

2. In a large bowl, toss the greens with the apple, onion, pecans and cheese. Toss with dressing before
serving of serve with the dressing on the side.
