Grilled Scallop and Mango Salad Recipe

Ingredients: ¼ cup whole buttermilk, 2 tbsps. mayonnaise, 1 tbsp. white wine vinegar, 1½ tsp. grated garlic, ½ tsp. salt, ¼ tsp. black pepper, 2 tbsps. olive oil, 1 lb. bay scallops (drained), 12 - (6") wooden skewers, 1 large mango peeled and sliced into ½" thick planks, 5 oz. little gem lettuce (separated) ½ cup red onions (thin little strips), ½ cup cooked, chopped bacon

Directions:1. Whisk together buttermilk, mayonnaise, white wine vinegar, tarragon, garlic, ¼ tsp. salt, ⅛ tsp. pepper in a small bowl. Slowly drizzle oil into the mixture, whisking constantly until combined.
2. Measure 2 tbsps. of the buttermilk dressing into a medium bowl. Add scallops to bowl, toss and coat. Marinate at room temperature 15 minutes. Thread scallops on skewer (about 5 per). Discard marinade.
3. Heat grill to high (450º - 500º) Place mangos on oiled grates. Grill until slightly charred, 1-2 minutes per side. Remove mango from grill, cut into ½" cubes. Set aside. Re-oil grates, place scallops skewers on grill. Grill uncovered, until charred, about a minute per side.
4. Line a platter with lettuce. Top with mango, chopped onions, and scallop skewers. Sprinkle with bacon, salt, pepper. Drizzle with reserved buttermilk dressing and serve immediately. |
