1 hard boiled egg
handful of mixed greens
handful of sliced cucumber
2 Tb. sauerkraut
rosemary-sea salt or Himalayan salt
rice wine vinegar

Directions:
Directions:
Combine cucumber, mixed greens, and sauerkraut in salad bowl. (2 T kraut is for a single serving.) Crumble or slice egg and add to salad (or reserve whole egg to serve on the side).

Dress with vinegar and salt to taste.
