1 - Grilled Beer Can Chicken, meat shredded,(discarded skin and bones), 8 oz. mozzarella cut in ½"
cubes, 2 heads little gem lettuce (chopped), 2 - vine grown tomatoes (¼ " sliced and then quartered),
1 cup fresh basil leaves, ⅓ cup fresh mint leaves, 1 bunch scallions (trimmed roots and tops),
1 lemon (halved), 3 peaches (halved and pitted), cooking spray, ½ tsp. crushed red pepper, salt,
pepper, 4 tbsps balsamic drizzle or balsamic vinegar, ¼ cup EVOO for drizzling

1. Heat a grill to medium. Spray peaches and scallions with cooking spray, season with salt and pepper
and grill, turning once, until charred in spots, 5-6 minutes. Let cool; roughly chop the scallions. Place
lemon, cut side down, on the grill and cook until charred, about 2 minutes. Squeeze the lemon juice
over the peaches.

2. Cover a large platter with the lettuce, top with scallions, mozzarella, tomatoes, chicken, peaches,
basil, crushed red pepper, balsamic drizzle, EVOO, and mint
