Chicken Marsala Recipe

2 T olive oil
4 skinless, boneless chicken breasts
salt and pepper
1/4 c flour
2 c mushrooms, cut
2 garlic cloves minced
1 large shallot minced
1 c dry Marsala wine
1 c chicken broth
2 T cold butter cubed
1/3 c drained capers

Directions:
Directions:
Preheat oven to 375
In a large skillet, heat oil over medium heat
Butterfly the chicken breasts, season with salt and pepper
Dust both sides with flour until properly coated
Add chicken to hot oil, searing both sides 4-5 minutes each.
Once chicken is fully cooked, transfer to oven.
In the same pan, add mushrooms to hot oil.
Cook for 5-6 minutes,
Add garlic and shallots cook to 2-3 minutes
Deglaze pan with wine and bring to simmer
Cook for 5-6 minutes, or reduced by half.
Add chicken stock and thyme and bring to simmer
Cook for 7-8 minutes or until reduced by half again.
Add butter and capers to the sauce, whisk for 1 minute
Season sauce with salt and pepper and remove from heat.
Top Chicken with sauce.
