spinach salad with avocado & cucumber

1/4 c vegetable oil
2 T minced fresh ginger root
1 T wasabi powder
3 T rice vinegar
2 T sugar
1 T lemon juice
pinch of kosher salt
1/4 c soy sauce
1 T sesame oil
4 salmon fillets (4-5 oz. each)

Whisk together vegetable oil, ginger root, and wasabi in small saucepan over medium heat for 2 minutes. Remove saucepan from heat and stir in vinegar, sugar, lemon juice, and salt. Transfer marinade to a small bowl. Set aside 1/3 c of marinade to use as vinaigrette for spinach salad.
Add soy sauce and sesame oil to remaining marinade in bowl: whisk until marinade emulsifies. Place salmon fillets in a glass baking dish. Pour soy marinade over salmon; cover and refrigerate for 30 minutes.
Preheat grill to medium heat. Brush grill rack with oil.
Place salmon on grill, skin side down, over direct heat. Transfer marinade to a bowl. Grill salmon, uncovered, until fish flakes easily, about 8 minutes. Do not turn salmon during grilling. Baste salmon every 2 minutes with marinade.

1 bag fresh spinach (9 oz)
1 c seeded, diced cucumber
1 c diced avocado
1/2 c orange segments
1/4 c sliced radishes
1/2 c toasted sliced almonds
1/3 c marinade reserved from sesame ginger salmon

Directions:
Directions:
Combine spinach, cucumber, avocado, orange segments & radishes for the salad in a bowl. Toss ingredients until evenly mixed.
Pour reserved 1/3 c marinade from grilled salmon over salad ingredients as a vinaigrette.
Garnish salad with almonds.

This is my "go-to" recipe for guests. If I can talk Argan out of not grilling elk, I'll do this recipe. I love that it ties in the marinade with the salad dressing.
