1 small pkg dry beans (any kind)
2 tbp salt,
2 quarts water
ham, or ham hocks (amount of your choice).
1 large onion-chopped,
1 large can tomatoes,
1 red pepper (optional) or 1 tsp chili powder,
juice of 1 lemon,
salt and pepper to taste.

Directions:
Directions:
Place in large kettle, cover with water, add 2 tbp salt, soak overnight. In morning drain, add 2 quarts water and ham, or ham hocks. Bring to boil, simmer slowly 2 1/2 to 3 hours. Add: 1 large onion-chopped, 1 large can tomatoes, 1 red pepper (opitional) or 1 tsp chili powder, juice of 1 lemon, salt and pepper to taste. Simmer another 30 mins or so.
