Pat Shaw

package fresh spinach
4 hard boiled eggs, sliced
cup finely diced ham
small head of iceberg lettuce
1 cup frozen peas
small onion, thinly sliced
1 cup sour cream
2 cups mayonnaise
1 cup Swiss cheese, grated
4 or 5 slices bacon, crumbled
1 tsp sugar

1. Use a large, deep bowl rather than a shallow pan or casserole dish.
2. Layer spinach in bottom of bowl. Sprinkle with salt, pepper and tsp sugar.
3. Layer sliced hard boiled eggs, then ham.
4. Add the iceberg lettuce, broken up finely. Sprinkle with salt, pepper and tsp sugar.
5. Layer the peas and sliced onions.
6. Whisk together sour cream and mayonnaise; spread evenly over top of salad.
7. Cover top with grated Swiss cheese and crumbled bacon. Cover tightly and refrigerate over night.
**This is nice for a covered dish dinner because it can be made ahead. This recipe looks really nice served in a clear glass bowl so all the layers show.
