8 eggs
1/2 tsp. seasoned salt
1 c. shredded cheddar cheese
1 c. milk
1 (3 oz.) package thinly sliced corned beef
1 tbsp. instant minced onion

Directions:
Directions:
Heat oven to 325°. Beat eggs, milk, and salt. Tear corned beef into small pieces and add to egg mixture. Stir in cheese and onion. Pour into greased baking dish (11 1/2 x 7 1/2 or 8 x 8). Bake uncovered for 40 to 45 minutes or until omelet is set and the top is golden brown.

You could use mozzarella cheese in place of cheddar. You could use ham, dried beef, or sausage in place of the corned beef.

Leftovers can be frozen and reheated
