2 ½ cups clover honey
¾ cup water
3 ounces liquid pectin
Juice of 1 lemon

Directions:
Directions:
In a large saucepan combine the honey and water. Bring to a boil quickly. Add the pectin and bring to a full rolling boil.

Stir in lemon juice and remove from the stove.

Fill prepared jars leaving a ¼-inch headspace. Adjust lids finger-tip tight. Process prepared jars for boiling-water canner for 5 minutes (start timing when water returns to a boil). Remove and cool.
