2 c sugar
2 c sour cream
1 tsp baking soda
1/2 c cocoa dissolved in 1/2 c coffee or hot water
2 c flour
1 tsp vanilla

Mix together and bake @ 350º for 35-45 minutes.

Mom's go to quick cake, of course she used real cream, with a little vinegar to make it sour. She usually frosted it with a boiled chocolate frosting or the white fluffiy icing.

My mom used leftover coffee when calling for water - like in this chocolate cake.

Back in the old days when we lived across Long Hollow - Sundays - Dad got us to Sunday school and Mom had some time for herself. But just about chore time, some family would appear. Mom hurried up and made her chocolate cake with white icing, then went out, caught a chicken, wrung it's neck, cleaned it - and pretty soon the cows were milked, chicken fried and I don't remember what else we had. There were happy voices and good supper coming from the kitchen.
