Mango diced 2 c.
Cream 100 ml
Milk 200 ml
Water 200 ml
Sugar 50 gm (4 Tbsp)
Gelatin 15 gm (4 tsp)
Lemon juice 2 tsp
Vanilla Extract ¼ tsp
Basil for Garnishee

Clear layer to seal the surface of the pudding:
Gelatin ½ tsp
Sugar 1 tsp
Water ½ c.

Puree one cup of mango with a blender and shift through a mesh into a bowl. Blend in cream and milk. Mix sugar and gelatin, pour slowly into the water and mix well. Heat the gelatin mixture and keep stir until completely dissolved. No need to boil the liquid. As long as the gelatin and sugar dissolved we can pour the mixture into the mango mixture, add vanilla extract and lemon juice mix well, then add ½ cup of the diced mango, Scoop into jelly bowls and chill for a few hours or until firmed. Garnish with basil and the rest of mango dices.

For garnishee we can use some other fruits to give different color effect. If the pudding is made for keeping a few days, add a layer of clear jello on top to keep the surface fresh and not being oxidized.
The amount of each ingredient can be adjusted to your taste. If you use more mango, then add less milk, if you like sweeter add more sugar and less lemon. Hopefully you will create a tasty mango pudding you would like.
