1 Ĺ - Cups of Cooking Oil
2 - Eggs (Beaten)
2 - Cup of Sugar (Try 1 Ĺ)
2 - Cups of Flour
2 - Teaspoons of Cinnamon
2 - Teaspoons of Baking Soda
2 - Teaspoons of Baking Powder
1 - Teaspoon of Salt (about)
1 - Cup of Nuts (optional)
2 - Cups of Grated Carrots
Icing ingredients
8 - Ounces of Cream Cheese
1 - Box of Powdered Sugar or as much needed for a thick consistency.
2 - Teaspoons of Vanilla
⅛ - Cup of Butter or Margarine
Ĺ - Cup Broken nuts Ė Sprinkle over the icing.

Pre-heat oven to - 350 į
Spray a 9 x 13 cake pan with Pam or Grease, and Flour
In a bowl, beat the oil and sugar, then add the eggs.
Sift the dry ingredients together and add to the egg mixture Add the carrots and nuts, then pour the mixture into the cake pan.
Bake for 45 to 55 minutes.
After the cake has cooled, add the icing.
Mix together and add the icing to the cake.
