4 sweet potatoes
Olive oil
Sea salt
cup sour cream or Greek yogurt
1 tablespoon pure maple syrup
2 teaspoons seeded, minced jalapeno
1 teaspoon fresh lime juice
Salt to taste
Bacon bits
Sliced scallions

Directions:
Directions:
1. Preheat oven to 375 degrees with a rack positioned in the center.
2. Rub sweet potatoes with oil and salt. Bake directly on rack until soft when pierced, 30-40 minutes, depending on size of the potatoes.
3. Combine sour cream, maple syrup, jalapeno, lime juice, and salt; chill until ready to serve.
4. Serve potatoes with sour cream mixture, bacon bits and scallions.
