2 lbs. Italian sausage, casings removed (mild or hot)
1 small onion, chopped
3-4 cloves garlic, minced
1 can (28oz.) diced tomatoes
2 cans (6oz.) tomato paste
2 cans (15oz.) tomato sauce
2 c. water (for a long period of simmering for flavors to meld.)
3 beef bouillon cubes
6 t.+ Italian seasoning
1½ t. brown sugar
1 t. salt
½ t. red pepper flakes
¼ t. black pepper
1 small package fresh mushrooms, broken into pieces
¼ c. + red wine (a good cabernet! Is a must!)

In a heavy stockpot, brown Italian sausage, breaking it up as you stir. Add onions and continue to cook, stirring occasionally until onions are softened. Add garlic, tomatoes, tomato paste, tomato sauce and water. Add Italian seasoning, brown sugar, salt, pepper and red pepper flakes. Also add the beef bouillon cubes and mushrooms pieces. Stir well and barely bring to a boil. Stir in the cabernet. Simmer on low, stirring frequently for at least an hour. A longer simmer makes a better sauce, just be careful to not let it burn!
