Ingredients: Blueberry Cake:
1 cup sugar 1/2 cup shortening 1 teaspoon vanilla 1 egg 2/3 cup milk 1 1/2 cup flour 2 teaspoon baking powder 1/2 teaspoon salt
1 1/2 cup blueberries 2 tablespoon flour 1 tablespoon sugar
Lemon Sauce:
1/2 cup sugar 1 tablespoon cornstarch 1/4 teaspoon salt 1 cup water 3 tablespoon lemon juice 1/2 teaspoon vanilla 2 tablespoon margarine

Directions:For the cake: 1: Preheat oven to 350º 2: Combine the first 8 ingredients in a bowl and beat for 3 minutes 3: Add the remaining flour and sugar, stirring until incorporated. 4: Gently fold in the blueberries. 5: Pour into a cake pan and bake for 45 minutes, or until a toothpick comes out clean.
For the sauce: 1: Combine the first six ingredients in a small saucepan and set over low heat 2: Bring to a simmer, whisking to a smooth consistency and to prevent sticking 3: Remove from heat and stir in margarine 4: Serve while warm |
