4 lg zucchini, halved
1 Tbsp olive oil
1 tsp thyme leaves
2 Tbsp butter
1 lb shrimp, cleaned
2 tomatoes, chopped
3 cloves minced garlic
¼ c heavy cream
¼ c grated Parmesan
juice of ½ lemon
1 c shredded mozzarella
fresh parsley (garnish)

Directions:
Directions:
Preheat oven to 350º

Score & scoop zucchini; reserve.
'Boats' into lg baking dish, drizzel w/oil.
Season w/salt, pepper, thyme.
Bake 20 min.

Saute in butter: Shrimp, seasoned.
Remove, cool, cut to bite-size.
Saute veggies 1 min, return shrimp to skillet.
Add cream, Parmesan, lemon juice; reduce.

Fill boats w/mixture, top with mozzarella.
Bake uncovered 10 min.
Garnish w/Parmesan & parsley.

Serve with Jasmine rice!
