Lemon-Pistachio Baklava Recipe

½ c. water
3 T. honey
1½ t. grated lemon rind
1 T. lemon juice
½ t. vanilla
Filling:
2 c. pistachios, slightly salted
¼ c. sugar
2 t. finely grated lemon rind
Phyllo:
1 c. butter
24 sheets frozen phyllo dough, thawed

Directions:
Combine all syrup ingredients in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to medium or medium-low; gently boil 5 minutes or until slightly thickened. Cool. (Syrup will thicken as it cools). Place half of pistachios in food processor or a grinder; grind until finely chopped. Repeat with remaining pistachios. In medium bowl, combine all the filling ingredients. Heat butter in a microwave-safe bowl until melted, around 40-60 seconds. Heat oven to 350º F. Unroll thawed phyllo dough, place a large dry towel on top so it doesn't dry out. Carefully lay 1 phyllo sheet in the bottom of cooking stone (or buttered cookie sheet); brush with butter. Repeat, using 12 phyllo sheets, brushing each sheet with the melted butter. Next, spread evenly the chopped pistachios on the phyllo sheets and continue to layer the last 12 sheets as like the first ones (layer: phyllo sheet then butter on each). Carefully cut baklava into 1½-inch strips, either diagonally to create diamonds shapes, or cut into squares. Bake 25-30 minutes or until slightly puffed and light golden brown. Place stone or cookie sheet on a wire rack; immediately pour cooled syrup over baklava. Cool completely.
