4 c sifted cake flour
1 tsp baking soda
1/2 tsp baking powder
1 c butter
3 cups sugar
1 Tbsp vanilla extract
2 c buttermilk
6 egg whites


2 c sugar
1 c water
1/3 tsp white vinegar
1/2 tsp salt
3 egg whites
1/2 tsp vanilla extract
14 oz bag of coconut


1/4 c butter
1/2 c sugar
4 eggs beaten
1 c orange juice
2 Tbsp orange zest
2 tsp Grand Marnier or 2 tsp orange extract

Preheat oven to 325. For cake - sift together cake flour, baking soda and powder, and salt. Cream together butter and sugar until light and fluffy. Beat in vanilla. Add dry ingredients alternately with buttermilk. In separate bowl beat egg whites until stiff peaks. Fold some of the egg whites into the batter. Gently fold in the remaining egg whites. Line 3 9" cake pans with wax paper. Divide batter evenly between pans. Bake in preheated oven for 40-45 minutes or until the cake tests done. While cakes are cooling make filling. In top of double boiler melt butter. Whisk in sugar, beaten eggs, juice and zest. Cook stirring constantly with whisk constantly about 12 minutes or until well thickened. Remove from heat and add flavoring. Chill covered before using.

For Frosting Combine water, sugar, vinegar and salt in heavy saucepan. Cook over medium heat stirring constantly until clear. Without stirring cook until mixture forms a slender thread (242) Beat egg whites until stiff. Beating constantly add hot syrup. Continue beating until the frosting holds its shape.
