1 can 16 oz diced beets

1 3oz package of lemon gelatin

⅓ cup of sugar

¼ cup apple cider vinegar

1 Tablespoon dry mustard

⅛ teaspoon sal

1 cup finely chopped celery

1 Tablespoon finely chopped onion

Directions:
Directions:
Drain beet juice into a measuring cup.Add water to make one cup

In medium sauce pan, mix beet mixture with gelatin, sugar, vinegar, dry mustard and salt.

Over medium heat, stir until gelatin is dissolved. Remove from heat and chill until mixture mounds when dropped from a spoon. Stir in beets, celery, and onion.

Pour into a 3½ cup mold. Cover and chill until firm. Unmold onto a chilled plate.
