4 - 6 oz. King or Atlantic salmon fillets, with skin, ¾-inch thick
4 tbsp. olive oil
coarse salt
ground black pepper
2 lemons, very thinly sliced and seeded
1 bulb fennel, halved, cored and very thinly sliced
1 onion, halved and very thinly sliced
40 large fresh tarragon leaves

Directions:
Preheat oven to 350º. Spray a large sheet of heavy duty foil and place on a rimless baking sheet. Place salmon fillets on foil, sides touching, skin-side down. Brush with olive oil and sprinkle with salt and pepper. Place three or four lemon slices on top of each fillet and cover with fennel and onion. Top with approximately 10 tarragon leaves per fillet and drizzle with remaining olive oil. Cover with another piece of heavy duty foil and crimp all edges to tightly seal. Bake 20-25 minutes. Serve with toppings in place.
