Ingredients:  
Ingredients:  
fish (a firm fish such as a northern pike)
1 medium onion sliced
3 tsp salt
3/4 cup sugar
2 tsp picking spice
White vinegar

1 quart jar with lid (cleaned and prepped for pickling)

Directions:
Directions:
1. clean and fillet the fish cutting them into small bite size pieces
2. fill the jar 3/4 full with the fish and onion
3. add the salt, sugar and pickling spices
4. fill the jar with vinegar
5. put the boiled lid on and seal, clean off the outside of the jar
Keep in refrigerator turning each day. It should take at least 4 days for the pickling to complete. Always keep in the refrigerator after opening.
