2 tbsp. butter
2 tbsp. flour
1 1/2 cup warm milk

pinch of each:
cayenne
dry mustard

dash of each:
hot sauce
Worcestershire sauce

1 1/2 cups shredded cheddar cheese




Directions:
Directions:
In a medium sauce pan melt butter, add flour. Stir until smooth and a bit dark. Cook for a minute then gradually add the warm milk. Cook until it begins to thicken, add the spices. Cook another minute then add the shredded cheese and stir until completely melted. Cook for another 5 minutes on low.

Personal Notes:
As with every recipe I share a "pinch" and a "dash" are just what you like. You can use as much or as litte as you want. Personally, I only put in salt, pepper, mustard and a pinch of nutmeg. I also discovered if you substitute the flour makes for a creamier sauce.
