3 large potatoes - peeled & cubed
2 oz. cream cheese
2 tbsp. milk
1 tbsp butter - softened
1/2 cup parmesan cheese - grated
1 tbsp chopped green onion
1 tsp salt
dash pepper
1 egg - beaten
1 1/2 cup bread crumbs

Directions:
Directions:
Preheat oven to 350º. Boil potatoes then drain. In large bowl mash potatoes with cream cheese milk and butter until smooth. Stir in the Parmesan cheese, onion soup, salt and pepper. Shape into 2" balls. In a shallow bowl pour beaten egg, place bread crumbs in another one.

Roll each ball in the egg then the bread crumbs. Place on a parchment lined baking sheet and bake for 15-18 minutes or until crisp and golden brown.

Serve with sour cream
