1 package Pillsbury Pie Crusts
1 lb.+ peaches (fresh is preferred, or canned)
½ c. -1 c. sugar
3 T. cornstarch
sugar for sprinkling
butter
cinnamon

Directions:
Directions:
Heat peaches, fresh or canned, until hot throughout. Add a dash of salt and ½ c. sugar if peaches are from a can or 1 c. sugar if peaches are fresh. Add 3 T. cornstarch. Stir well. Place rolled out pie crust into a glass baking dish. Pour peaches into pie crust. Dust with cinnamon and dot with butter. Cut second pie crust into ¾-1-inch strips. Cover peaches with strips in crisscross pattern. Sprinkle with sugar and bake at 400º for 40-50 minutes. Serve warm, with a scoop of vanilla ice cream or Cool Whip, if desired.

This recipe was from Cathy's mom, Lois. We had 6 peach trees on our farm, so we had fresh peaches every year.
