Spinach (or romaine) lettuce
2 medium sweet potatoes
3-4 T oil, divided
10 oz baby bella or white mushrooms
Salt and black pepper to season
1/4 C toasted slivered almonds
1/4 C pomegranate seeds

Dressing:
A little more than 1/2 C mayo
1/4 C soy sauce
1/4 C honey
1 Clove garlic, crushed (garlic cube)

Directions:
Directions:
1. Preheat oven to 400, Peel and cube the sweet potatoes. Toss with 2-3 t oil, salt, and pepper. roast until soft and crispy at the edges (35 -45 minutes, depending on the size of your cubes)
2. Slice mushrooms. Place in a saute pan with 1 T oil. Saute until crispy at the edges (8-10 minutes)
3. Combine all the dressing ingredients. Toss desired dressing amount (don't need to use all) with greens, sweet potatoes, mushrooms, almonds, and pomegranate seeds.
