White Sauce

2 TBS butter
3 TBS flour
1 cup milk

4 cups juice from fresh tomatoes (or mix 48 oz can of petite diced tomatoes in blender until smooth and pureed) You can also use a combination of fresh and canned tomatoes
¼ cup sugar
2 tsp salt or more to taste
½ tsp dried basil (can also use chopped fresh basil)

Melt butter, stir in flour use whip until mixed then add milk and stir with whip until thick.
Add tomato juice and next ingredients to white sauce and heat on medium heat blending with a whip until heated completely but not boiling.

The soup is ready to serve when hot.

It’s good with soda crackers, oyster crackers or grilled cheese sandwiches
