6 cups hot mashed potatoes
stick butter
1 cup sour cream
1 cup cottage cheese
1 cup chopped scallions ( or grated small onion)
lots of grated Parmesan cheese
salt and pepper to taste

Directions:
Directions:
Mix all ingredients together except for Parmesan cheese and put in buttered casserole dish. Spread Parmesan thickly on top.

Age overnight in refrigerator

Heat oven to 350 degrees

Cook for 45 minutes or until the potatoes are bubbly hot under the cheese

If the top browns too quickly put foil over the top

This comes from Sue's piano teacher, and has been a family favorite for years. It is nice because you can prepare it the day before and it tastes even better as the ingredients blend together
