1 1/2 Tbsp Olive oil
1 Sm onion
1 Garlic clove
1 Cup Uncooked Orzo pasta
2 1/2 Cups unsalted chicken stock
1 Tbsp Greek spice
3 Cups fresh baby spinach leaves
1/4 Cup red peppers, chopped
1/2 Cup crumbled feta cheese

Directions:

1. Heat oil over medium heat. Cut onion into chunks.
2. Add onion, garlic and orzo. Leave uncovered 4-6 minutes or until orzo is lightly toasted, stirring frequently.
3. Remove casserole from heat. Stir stock and greed spice into orzo. Microwave, covered on high for 12-13 minutes or until most of the liquid is absorbed and orzo is tender.
4. Remove casserole from microwave. Add spinach, bell peppers and half of the feta. Cover and let stand 4 minutes or until spinach starts to wilt. Stir until combines. Sprinkle with remaining feta.
