8 c. seeded & sliced jalapenos
2 c. cider vinegar
6 c. granulated sugar
½ tsp. turmeric
½ tsp. celery seed
2 T granulated garlic

Directions:
Directions:
1. In a large pot, bring vinegar, sugar, turmeric, celery seed, and garlic to a boil. Reduce heat and simmer for 5 minutes watching carefully to avoid boil over.
2. Add the pepper slices and simmer for exactly 4 minutes. Use a slotted spoon to transfer the peppers into sterile canning jars to within 1/4 inch of the upper rim.
3. Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes stirring frequently to avoid boil over.
4. Use a ladle to pour the boiling syrup into the jars, release air with plastic handle, and add more syrup as needed. Wipe the rims of the jars and seal to finger-tip tightness.
5. Place jars in canner and process for 10 minutes for half-pints or 15 minutes for pints.
6. Remove jars from canner and allow to cool before storing.
