3 Tbsp. brown sugar
1 Tbsp. sour cream
⅓ c. chopped pecans
3 sm. bananas
1 egg, slightly beaten
½ c. sugar
¼ c. oil

Directions:
Directions:
1½ c. packaged pancake mix (any packaged pancake mix will do). In a small bowl, stir together the brown sugar and sour cream; stir in pecans and set aside. Mash bananas. In a medium mixing bowl, stir together egg, sugar, oil and mashed bananas till well blended. Add pancake mix; stirring just until moistened. Grease muffin cups or line with paper baking cups; fill ⅔ full with batter. Drop 1 teaspoon of the pecan mixture atop each muffin. Bake at 400 for 15-18 minutes or till golden brown. Yield: 12 muffins.
