1½ cups corn oil
2 cups sugar
3 eggs
2 cups flour
2 tsp cinnamon
2 tsp baking soda
2 tsp vanilla
1 tsp salt
1 box of coconut
2 cups shredded carrots
1 cup chopped nuts
1 small can crushed pineapple

Directions:

Bake for 1 hour in a 9 X 13-inch pan at 350°F.

Carrot cake topping.
Four ounces cream cheese, ½ box powdered sugar, 1/2 stick margarine, 1 tsp vanilla, 1/2 can coconut, 1/4 cup chopped pecans.
Blend cream cheese, powdered sugar, margarine, + vanilla. Then add coconut and chopped pecans, and mix thoroughly. Spread evenly over the cake.
