1 + 1/2 cup corn oil
2 cups sugar
3 eggs
2 cups flour
2 tsp cinnamon
2 tsp baking soda
2 tsp vanilla
1 tsp salt
1 box coconut
2 cups shredded carrots
1 cup chopped nuts
1 small can crushed pineapple

Bake: 1 hour in 9 X 13 inch pan @ 350 F.

Carrot cake topping.
4 ounces cream cheese, 1/2 box powdered sugar, 1/2 stick margarine, 1 tsp vanilla, 1/2 can coconut, 1/4 cup chopped pecans.
Blend cream cheese, powdered sugar, margarine + vanilla. Than add coconut + chopped pecans + mix thoroughly. Spread evenly on top of cake.
