Ingredients: 2 Cups of Krusteaz pancake mix 2 Cups of Whole Milk 2 Egg Yolks 2 teaspoons Sugar 2 teaspoons Vanilla or Gran Marnier Dash of Salt 2 Teaspoons of Butter + additional melted butter to use between each application of crepe batter
Blintz Filling: 1 8 0z. Small Curd Cottage Cheese 1 Egg Yolk 1-2 Tablespoons Sugar
Serve with: Raspberries Blackberries Sliced Strawberries Blue Berries Sliced Bananas Cooked Apples

Directions:Melt the butter and set aside to cool so it won't cook the egg yolk when added to the batter... MIx the egg yolks and sugar and salt by hand or using a food processor. Add the milk, vanilla (or Gran Marnier) and pancake mix to the eggs and sugar. If mixing by hand, use a metal whisk untile there are NO LUMPS. Slowly add the melted butter while stirring or adding to the food processor's emulsion opening. If there are still lumps after whisking you can strain the batter through a mesh strainer.
Let the batter sit for 20 minutes and then whisk before pouring the batter into a heated crepe pan or small skillet.
I use a ramikan of melted butter (about 4-6 tablespoons) and a bunched up paper towel to apply the melted butter to the crepe pan between each crepe.
Heat Small skillet or crepe pan on Medium High. Add enough melted butter to cover the bottom and sides of the skillet or crepe pan Ladle about 1/4 cup of crepe batter and swirl the batter so that is completely coats the bottom of the skilet and about 1/4" up the side of the skillet. Leave on heat until there is a brown ring crust on the crepe. Pick up the skillet and Gently slide a butter knike at 6 o'clock/middle and lift the crepe to flip. Cook on second side for about 5 seconds and then pick up skillet and turn over onto a plate. The crepe will fall out and this is the beginning of the crepe pile!
For the Blintz Filling: Mix the sugar and egg yolk. Add mix to cottage cheese |

Notes: My Mama loves Crepes!!! I love making them for her. I learned this recipie when I was a server at Paulette's in Memphis. Mama likes the Blintz Filling but I also serve with Bananas and Berries and Whipped Cream. Daddy has honey with a few crepes. The Blackburns top crepes with syrup and Daddy whole heartedly approves. This is a dessert crepe so if you want to make a savory crepe, omit the sugar.
