1 cup all purpose flour, ¾ cup whole milk, at room temp. or slightly heated warm, 1 tsp. kosher salt.
¼ cup unsalted butter (melted), ⅓ cup pure maple syrup, 1 cup finely chopped thick cut bacon,
4 large eggs, room temperature

1. Preheat oven to 425ºF with oven rack in lower third of oven. Cook chopped bacon in a medium nonstick skillet over medium high heat, stirring occasionally, until crisp and golden, 5-7 minutes. Using
a slotted spoon, transfer to a plate lined with paper towels. Allow drippings to cool slightly, about 5
minutes; pour into a small heat-proof bowl.

2. Combine the drippings with 2 tbsps. melted butter and stir together. Spoon 1 tsp. dripping mixture
into each cup of the popover pan. Place pan in oven to heat.

3. Stir together flour and salt in a medium bowl. Whisk together milk, maple syrup, eggs, and
remaining 2 tbsps. butter in a large bowl. Gradually whisk flour mixture into egg mixture until almost
smooth; fold in cooked bacon. Transfer batter into spouted measuring cup.

4. Carefully remove hot pan from oven. Fill each cup about ⅔ full. Bake in preheated oven until popovers
are puffed and golden brown, 18-20 minutes. Brush tops with remaining syrup, Remove from pan,
serve immediately.
