1 ½ C. ALMOND MEAL ( sifted )

1 ¾ C. POWDER SUGAR

4 EGGS ( cold )

½ C. SUGAR

2 TEAS. COCO POWDER

2 TEAS. RASPBERRY JAM ( strained )

¼ TEAS. RED FOOD COLOR

1 C. WHITE CHOCOLATE CHIP (melted)

4oz CREAM CHEESE

Preheat oven 300 degree, add almond meal and powder sugar and mix to combine. Using a hand-held mixer, beat egg whites until they stick in the bowl.


Add sugar/ almond meal mix to the whipped egg whites. Divide batter in two. In one bowl gently fold in the cocoa powder. The other bowl add the jam and food color, stir until combined. Transfer the batters to two separate piping bags, and pipe on to parchment paper baking sheet. Drop tray on counter to even it out.

Bake 20 minutes. In a bowl, add melted chocolate and cream cheese, mixed to combine. Pipe cream cheese filling on one half top with the other half. Fridge for two hours then serve.
