Ingredients:  
1 1/2 lbs. sausage, browned ...3 cups shredded cheddar cheese
1/2 cup green pepper chopped ...3 cups shredded hash browns, thawed
1 dozen eggs ... 2 cups milk

Layer hash browns in 9x13 dish; sprinkle with salt. Top with sausage , cheddar cheese, green pepper. Beat together eggs and milk. Pour over mixture. Bake 350 for 45-50 minutes.

**Smaller Version of my Sausage Hash Brown Quiche**

1/2 lb. sausage, browned ... 3 cups hash browns, thawed
1/3 cup butter ... 1 cup cheddar cheese
1/2 cup milk ... 4 eggs. beaten ... salt and pepper

Press hash browns in bottom of pie pan and pour the butter over top. Bake 425 for 25 minutes. Remove from oven and top with sausage & cheese. Mix remaining ingredients and pour over top of the cheese. Reduce oven to 350 and bake for additional 25 minutes.
