Ingredients:  
1 head lettuce
2 carrots cut julienne
1 cucumber cut up.
2 chicken breasts


Dressing:
1 C vegetable oil
1/4 C sugar
1/3 C white vinegar
2 T soy sauce
2 T creamy peanut butter
2 cloves garlic, minced.

Directions:
Directions:
Heat oil and add cut up chicken.
Stir fry until cooked through.Remove from the pan and add the carrots and stir fry 4 to 5 minutes.
Return the chicken to the skillet to keep it warm.

Shred lettuce.
Mix dressing ingredients and put on salad 1/2 at a time.
