1 large seedless cucumber peeled and cut in small cubes
2 cups plain yogurt
2-3 gloves garlic, minced
pinch white pepper
pinch kosher salt or sea salt
1 tbsp of dried , crushed mint ( or 3 tbsp finely chopped fresh mint)

Directions:
Directions:
1. sprinkle the cucumber with salt, set in a colander and drain for at least 30 minutes
2. combine yogurt, garlic, white pepper and salt.
3. stir in the mint
4. add the drained cucumber
