1 egg yolk
1/2 tsp fine salt
1/2 tsp dry mustard
2 pinches sugar
2 tsp freshly squeezed lemon juice
1 tbsp white wine vinegar
1 cup corn or olive oil

Directions:
Directions:
1. In a glass bowl whisk the egg yolk and dry mustard together
2. combine the lemon juice and vinegar in another small bowl
3. whisk half the juice/vinegar mixture into the egg yolk/mustard mixture
4. while whisking this mixture start adding the oil a few drops at a time making sure you thoroughly mix things creating an emulsion before adding more oil.
Once you have combined half the oil, whisk the rest of the lemon juice/vinegar mixture and slowly add the rest of the oil whisking and creating an emulsion.
Let the finished product set out at room temperature for and hour then refrigerate.
