cup (1 stick) butter, softened, cup granulated sugar, cup packed brown sugar,
2 large eggs, 1 cups mashed bananas (about 3 ripe), cup sour cream, tsp. vanilla,
1 cups all-purpose flour, 2 tsp. baking powder, tsp. salt, 1 can (8oz) crushed
pineapple, drained, ⅓ cup flaked coconut, cup mini semisweet chocolate chips

Directions:

1. Preheat oven to 350F. Spray 9x5 " loaf pan with nonstick cooking spray.

2. Beat butter, granulated sugar and brown sugar in a large bowl with electric mixer at medium
speed until light and fluffy. Beat in eggs, one at a time, scraping down bowl after each addition.
Add bananas, sour cream, and vanilla. Beat just until combined.

3. Sift flour, baking powder and salt in a small bowl. Gradually beat flour mixture into banana
mixture just until combined. Fold in pineapple, coconut, and chocolate chips. Spoon batter
into prepared pan.

4. Bake 50 minutes or until toothpick inserted into center comes out almost clean. Cool in
pan 1 hour; remove from pan.
