Potato Salad Recipe

3 lbs potatoes, cooked
4 hard cooked eggs, chopped
1/3 C chopped onion
1$ C Chopped green pepper
1/4 C sour cream
3/4 C chopped celery
1/4 C chopped cucumbers
1/2 C mayonnaise
1 t prepared horseradish

Optional 1/3 C Italian Salad Dressing

Cub potatoes,
Place in a large bowl. (if using Italian dressing, add and toss to coat.)

Cover and chill for 2 hours.
Add eggs, celery, onion, cucumber and green pepper,
Mix well.
In a small bowl, combine mayo, sour cream, and horseradish,
Mix well.
Pour over potato mixture and toss to coat
Chill for at least 1 hour.
