1 large sweet potato (about 1 lb.), peeled and grated through the large grates of box grater
4 tbsp. butter, salt, pepper, maple syrup, brown sugar, cinnamon, extra butter

Directions:
Directions:
1. Melt 2 tbsp. of butter in a cast iron pan on medium high heat. you want the butter to bubble,
but not burn before you put the sweet potato in the pan.

2. Scoop large spoonfuls of grated sweet potatoes into the pan forming small mounds.
Gently press to spread the mounds out a bit. Sprinkle with salt and pepper.

3. cook undisturbed until they are nicely brown on one side, about 4-5 minutes, then carefully
turn them over with a metal spatula to brown the other side, another 4-5 minutes.

4. when done place on a cookie sheet in a warmed oven to keep warm until ready to eat.
drop some small pads of butter, sprinkle brown sugar, cinnamon, and some drops of
maple syrup
