4 GRANNY SMITH APPLES
2 TABLESPOONS FRESH LEMON JUICE
6 TABLESPOONS SUGAR
3 LARGE EGG YOLKS
1 CUP HEAVY CREAM
1 TEASPOON VANILLA
1/3 CUP GOLDEN RAISINS - OPTIONAL
PINCH OF CINNAMON

IN A BOWL, STIR TOGETHER THE APPLES, WHICH SHOULD BE PEELED, CORED, AND CUT INTO EIGHTS. ADD IN THE LEMON JUICE AND TWO TABLESPOONS OF SUGAR, AND TOSS THE MIXTURE UNTIL THE APPLES ARE WELL-COATED. IN A LARGE BOWL, WHISK TOGETHER THE YOLKS, THE CREAM, 2 1/2 TABLESPOONS OF THE REMAINING SUGAR, A PINCH OF SALT, AND VANILLA, AND STIR IN THE RAISINS. ARRANGE THE APPLES DECORATIVELY IN THE SHELL. POUR THE CREAM MIXTURE OVER THE APPLES, AND SPRINKLE THE REMAINING 1 1/2 TABLESPOONS OF SUGAR AND CINNAMON OVER SAME.

BAKE THE TART IN THE MIDDLE OF A PRE-HEATED OVEN AT 375 DEGREES FOR ONE HOUR AND TEN MINUTES, OR UNTIL THE APPLES ARE TENDER WHEN PIERCED WITH A CAKE TESTER.
