3 cups flour, plus more to dust the loaf pans
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon kosher salt
2 cups sugar
1 ¼ cups canola oil
4 eggs
4 cups roughly chopped strawberries

Directions:
Directions:
Heat the oven to 350°F. Grease the 2 loaf pans and dust with flour, shaking out the excess flour.

Whisk 3 cups of flour, baking powder, cinnamon, and salt in a large bowl; set aside. In a separate bowl, whip the sugar, oil and eggs. Pour the wet ingredients into the dry ingredients and whisk until just combined. Stir in the strawberries. Divide the batter evenly into the loaf pans.

Bake until golden and a toothpick inserted in the middle of the loaves comes out clean, about 1 hour. Remove the loaves from the oven. After 10 minutes, remove the loaves from the pans and cool on a rack. Cool the strawberry bread 30 minutes before slicing. Store the bread in a zipper bag in the refrigerator.
