2 large onions, chopped
4 tablespoon oil or schmaltz (rendered chicken fat)
1 pound chicken livers
3 hard boiled eggs, peeled

Directions:
Directions:
Fry onions in heated oil or schmaltz in a heavy 10-inch frying pan until soft and golden brown. Have more oil or schmaltz ready to use if needed. Remove onions from the pan and set aside. Quickly fry livers in the same oil; do not turn or brown even if liver seems rare. Drain the liver on paper towels until cool. Then grind the liver (or use a food processor) until the consistency of pâté. (More traditionally, chop the liver and onions in a wooden bowl.) Mash the hard boiled eggs with the back of a fork. Add the onions and hard boiled eggs to the liver and mix well. Add salt and pepper to taste.

Garnish with little pickles, cucumber, parsley, olives, or capers.
