1 cup margarine (can sub in ¼ to ⅓ cup coconut oil)
1½ cup brown sugar
½ cup white sugar
2 eggs
1 tsp vanilla
1 tbsp. lemon juice
2 cups flour
1 tsp baking soda
¼ tsp salt
2 cups oatmeal
1 cup coconut
1½ cups raisins or chocolate chips

Pre heat oven to 350º

In a large mixing bowl, cream margarine. Add both sugars and mix on medium speed. Add eggs, vanilla and lemon juice. Continue beating until light and fluffy.

Mix flour, soda and salt together. Slowly add to the creamed mixture, scraping down sides with a spatula. Add one at a time - the oatmeal, coconut and raisins.

Drop by rounded tablespoonful onto a baking sheet, round out and flatten slightly with a fork.

Bake 12 minutes.
