¾ cup sugar
¼ cup flour
½ teaspoon salt
1 can (20 ounces) crushed pineapple in pineapple juice, undrained
1 cup sour cream
1 tablespoon lemon juice
2 egg yolks, lightly beaten
1 baked and cooled 9-inch pie shell

Directions:
Directions:
In a sauce pan combine the sugar, flour, and salt. Stir in pineapple, sour cream, and lemon juice. Cook, stirring constantly, until mixture comes to a boil. Then cook and additional 2 minutes. Mixture should be thickening. Stir a small amount of the mixture into the egg yolks, continually stirring the yolks. Add the yolks to the cooking mixture, stirring constantly and cook 2 more minutes. Cool filling. Pour into baked pie shell. Pie may be topped with whipped cream or a meringue.
